A RESTAURANT INSPIRED

BY BOOTH

Booth’s Extra Fine began with a family photo album. Discovered in 2019, its black-and-white photographs captured Chef Nick Pfannerstill’s grandfather, Booth, and a world of early to mid-century American dining that became the inspiration for the restaurant.

A boisterous Milwaukee car salesman who was always dressed to the nines, Booth had a particular appreciation for a proper night out. After work, that meant meeting his pals for steaks and martinis at the supper clubs he frequented, much more often than he probably should have.

Today, those photographs line the walls of Booth’s Extra Fine, a restaurant created in his spirit: classic, generous, a little indulgent, and always ready for a good time.

NICK PFANNERSTILL

CHEF - OWNER
Raised in Kentucky, Chef Nick Pfannerstill has spent more than two decades in hospitality, including time in some of New York City’s most celebrated kitchens. He climbed the ranks at Café Boulud before becoming Chef de Cuisine at Dovetail, where he helped maintain the restaurant’s Michelin star for five consecutive years.

In 2019, Nick co-founded Nobody Told Me, bringing together his fine-dining background with a more playful approach to food, drinks, and hospitality. Booth’s Extra Fine is his most personal project yet, inspired by the places his grandfather loved: great steaks, cold martinis, long dinners, and plenty of reasons to stay for another round.
